Chicken Vermicelli Salad is a delicious and filling salad that can be served both as a side dish or enjoyed on its own.

Recipe – Chicken Vermicelli Salad

Ingredients:

  • 200 g vermicelli pasta

  • 300 g chicken breast

  • 1 red pepper

  • 1 green pepper

  • 1 carrot

  • 4–5 spring onions

  • 1/2 bunch parsley

  • Juice of 1 lemon

  • 3 tbsp olive oil

  • Salt, black pepper

  • Optional: corn, olives, tomatoes, or other ingredients

Preparation:

  1. Boil the chicken breast in salted water, then shred.

  2. Cook the vermicelli pasta in salted water, drain, and let cool.

  3. Finely chop the peppers, carrot, spring onions, and parsley.

  4. Combine the shredded chicken, vegetables, and vermicelli in a large bowl.

  5. Add lemon juice, olive oil, salt, and pepper. Mix well.

  6. Optionally, enrich with corn, olives, or tomatoes.

  7. Chill in the refrigerator and serve cold.
