Lamas Lemon Tantuni Pasta

We are bringing together Mersin’s famous tantuni, the delightful Erdemli Lamas Lemon, and pasta. Here’s the special recipe:

Ingredients:

  • 1 Erdemli Lamas Lemon

  • 350 g beef ribeye

  • 1 onion

  • 1 tomato

  • ½ bunch parsley

  • 2 tbsp butter

  • 2 cups flour

  • 1 tsp sumac

  • 1 tsp chili flakes

  • 1 tsp paprika

  • 1 tsp sumac

  • Salt

  • Black pepper

Preparation:

  1. Start by boiling half a portion of small pasta. Don’t forget to add 1 tsp of salt to the boiling water.

  2. Dice 350 g of beef ribeye into small cubes, using a separate board to avoid cross-contamination.

  3. Place the meat in a bowl, add 2 tbsp olive oil, a pinch of salt, and black pepper, then mix.

  4. Heat a pan, add the meat, and cook for about 2–3 minutes.

  5. While stirring, add 2 tbsp butter and keep mixing.

  6. Sprinkle 1 tsp paprika and stir again.

  7. Once the meat is cooked, turn off the heat. Slice 1 onion into thin strips.

  8. Place the onions in a bowl. Finely chop half a bunch of parsley and add to the bowl.

  9. Add 1 tsp sumac, 1 tsp chili flakes, 1 tsp salt, and 1 tsp black pepper. Mix well.

  10. Slice 1 tomato into strips and place in another bowl.

  11. Cook the pasta for 8–9 minutes, then drain.

  12. Turn the pan back on, add the pasta, and mix well with the meat.

  13. Serve on a plate, top with the sumac-onion mixture and sliced tomatoes.

  14. Finally, squeeze the juice of 1 Lamas lemon on top.
